Baked Potato Nachos

3 potatoes
4 T olive oil
2 tomatoes, diced
4 slices Oven Crisp Bacon, diced
few sprigs green onion, chopped
2 handfuls marble cheddar, grated
salt and pepper, freshly ground
sour cream for dipping


Peel, wash and slice potatoes crosswise.
Season with salt and pepper and rub with oil in a mixing bowl.
Spread on a baking sheet and broil on high for 20 min, or until starting to brown.
Turn the potatoes over.
Sprinkle with 2/3 of cheese.
Add bacon, tomatoes and green onion.
Add the rest of the cheese on top and broil for 5 min or until the cheese just started to bubble.

Match made in Heaven:

Sour cream for dipping and a pint of lager!
