Baked Zucchini Chips

2 zucchini
1/2 C breadcrumbs
1/2 C parmesan cheese, finelly grated
2 eggs
salt and black pepper, freshly ground


Preheat oven to 425F.
Lightly spray a baking sheet with cooking spray or oil.
Cut the ends off each zucchini. Slice into 1/2-inch (1 cm) thick strips lengthwise, or slices crosswise.
Combine bread crumbs, Parmesan, salt and pepper.
In a seperate bowl, whisk the egg with a pinch of salt.
Dip zucchini slices into eggs, then coat in the bread crumb mixture.

Bake for about 15-20 minutes, turning half way through.
Then broil for 3-5 min until golden brown and crisp.

Match made in Heaven:

Serve with the coulis, chipotle aioli, ranch or marinara as a dipping sauce.
