1 lb ground meat
1 Seasoning
1 Tomato Salsa
1 Guacamole
300 g cheese, shredded
bag tortilla chips
few sprigs green onions, chopped
handful black olives, chopped
handful tomatoes, chopped and drained (optional)
handful green chili peppers, marinated (optional)
sour cream for dipping (optional)


Set the oven on broil.
Fry ground meat in olive oil, add spices and cook until no longer pink.
Spread the chips on the baking sheet.
Sprinkle half of the cheese.
With a slotted spoon, making sure no extra fat drips on the chips, spread the meat.
Sprinkle olives, tomatoes and chilis.
Cover with the remaining cheese.
Broil until cheese started to melt and the chips just hot but not browning.
Add green onions at the very end of broiling.
Serve with Tomato Salsa, Guacamole, and sour cream.‎

Your favorite beer.

Try the Beer Cheese Sauce:
1 T butter
2 T flour
1/2 C whole milk
1/2 C beer
1 C cheddar, shredded
1 t Sriracha

On medium high, melt butter, stir in flour. Cook for a minute.
Gradually add whole milk, then beer.
Stir in the cheese and Sriracha and mix until cheese melts.
Serve right away.

    I loved the tangy cheese beer sauce. I did’t have whole milk, so I used 2% and added more flour.

    The beer cheese sauce would also make a great pasta sauce!
