3 T olive oil
1 onion, finely chopped
3 cloves garlic, minced
1/2 C parsley, finely chopped
1 lb fresh spinach, washed and dried
1 C sour cream
1/2 C Jalapeño Philadelphia cream cheese
1/2 C mayo
1 C Grana Padano, coarsly shredded
kosher salt and white pepper, freshly ground
Preheat oven to 325F.
Fry onions and garlic in olive oil until just golden. Add parsley, fry for 3 min.
Add spinach, fry until just wilted.
Remove from heat, add sour cream, cream cheese, mayo, mix well.
Adjust salt and pepper (remember, Padano will make it saltier).
Pour all in a baking dish, sprinkle with Grana Padano and bake until bubbly and cheese is golden.

Baked pita chips, or put in in a bread bowl!
