Gingerbread Loaf

Ingredients:

1/2 C butter, at room temperature, in pieces
1 C molasses
1/2 C light brown sugar, soft, packed
1/2 t salt
2 T oil
1/2 C yoghurt, room temperature
2 eggs, room temperature
2 1/2 C flour
1 T orange zest
2 t baking powder
1 t baking soda
2 t ground ginger
1 T ginger, peeled, freshly grated
1 t cinnamon
pinch nutmeg
1/8 t black pepper, freshly ground

Directions:

Heat butter, molasses and sugar until melted. Cool to room temperature.
Pour into the bread maker.
Put the remaining ingredients in the bread maker in the order listed.
Stir with a spoon after 4 minutes of mixing.
Remove the paddle at 8 minutes sound, and continue to bake on Quick Bread/Cake cycle.

Match made in Heaven:

Serve with whip cream and Salted Caramel Sauce.
Pair with Mulled Apple Cider.
