Bacon Mushroom Scramble

2 small potatoes, diced small
3 strips bacon, roughly cut
1 shallot, julienned
8 mushrooms, quartered
2 plum tomatoes, diced
3 eggs, beaten with salt and pepper, freshly ground
olive oil


In olive oil on high, lightly brown potatoes.
Add bacon and shallot. Cook for few minutes.
Add mushrooms, cook stirring often until all is browned.
Turn the heat to medium.
Stir last time, sprinkle tomatoes on, and pour in the eggs.
Let sit for a minute, then stir each minute until eggs are set.

Match made in Heaven:

A toasted piece of freshly baked White Bread loaded with butter and a good cup of coffee.
