2 slices White Bread
4 T Parmigiano-Reggiano, finely grated
1 T parsley, finely chopped
1 clove garlic
2 T butter
salt and pepper, freshly ground
Slice the bread thick.
With a cookie cutter cut out the middle of each bread slice.
Spread the butter over the bread, sprinkle with garlic, parsley and cheese.
Break the eggs into the toast holes.
Bake for 10-15 minutes, or until the eggs are done.

A pile of bacon and a good cup of coffee.
