Home-made Sausage and Egg Muffin

Ingredients:

750 g ground pork
1 t dry mustard
1/4 t paprika
1/4 t nutmeg
1/4 t dry coriander, ground
1/4 t black pepper, freshly ground
1/8 t cayenne pepper
1/8 t chipotle chili pepper
1 t salt
1 1/2 t sugar

2 eggs, fried or poached
2 enlish muffins, toasted

Directions:

Combine all of the sausage ingredients, but the eggs and the muffins, mix thoroughly.
Let sit and marinate for 1-2 hours.
Form 3-4 thick patties.
You can BBQ the patties,
If broling, turn oven on broil 550F and flip the patties over once they turned brown on top (10-15 min), then broil for 5 min longer or until done and juices run clear.
Note: You can also freeze uncooked patties individually wrapped.
Assemble on a toasted english muffin with a fried or poached egg.
