Lobster Scrambled Eggs

4 large eggs
2 T 3.25% milk
1 T butter
1/2 C Cooked Lobster‎ meat, in small pieces
2 lobster claws
2 T green onions or chives, finely chopped
salt and pepper, freshly ground


Beat the eggs with the milk, salt and pepper.
Over medium heat, melt butter, add the eggs, let sit until starting to set at the bottom.
Add lobster pieces and stir until cooked.
Garnish with the onion or chives, and a lobster claw.

Match made in Heaven:

Buttered toast, good cup of coffee or a Buck’s Fizz
