1 can black beans (19 oz), with liquid reserved
1/2 C cilantro, chopped, reserve some of that for garnish
2 cloves garlic, minced
1 t cumin
1/4 t chipotle chile powder
1/2 C sour cream
4 strips Oven Crisp Bacon, crumbled, fat reserved
Process beans until creamy and smooth with the 2/3 C of liquid.
Fry onion and garlic in bacon fat until brown (add 1 T of butter if needed).
Add the beans and the rest of the ingredients except bacon and sour cream.
Cook over medium heat until boiling.
Remove from heat, let stand for 10-15 min to thicken up.
Top with sour cream and bacon, garnish with cilantro.
