Caesar Salad Dressing

2 cloves garlic
4 fillets anchovy
2 egg yolks
2 t Dijon mustard
3 t lemon juice, freshly squeezed
3 t red wine vinegar
2 t Worcestershire sauce
1/4 t black pepper, freshly ground
2/3 C olive oil


Grate the garlic.
Process all the ingredients but the olive oil in the food processor
until blended well.
Slowly add olive oil while running processor, until smooth and creamy.
Use right away or refrigerate.

Match made in Heaven:

Mix with lettuce, top with shaved Parmigiano-Reggiano and Garlic Croutons.
Try with Grilled Romaine, and Grilled Croutons.
