Corn, Red Pepper and Mango Salsa

1 ear fresh corn
1/2 red pepper, diced
2/3 C ripe mango, diced
1/2 C cilantro, chopped
1 T olive oil
2 T honey
1/2 t ground cumin
salt and cayenne pepper (optional)


Steam/boil corn until done, cut the kernels off.
Combine corn with the rest of the ingredients and season.
Best used same day.
