Avocado Hollandaise

Ingredients:

1 ripe avocado, chopped
3 t lemon juice
1/2 C hot water
3 T olive oil
salt and black pepper, freshly ground

Directions:

In a blender puree avocado with lemon juice and water, until smooth.
With the machine on, add in olive oil.
Season with salt and pepper.
