Mignonette Sauce

1/4 C champagne vinegar
1 T red onion, finely minced
1/4 t black or white pepper, coarsely ground
1/8 t kosher salt
1/8 C sparkling rose wine


Mix all ingredients, top off with rose. Chill.
Use over raw oysters.

Match made in Heaven:

Oysters and champs!
Can add 1/4 peeled and grated cucumber and 1/8 t sugar.
