Tomato Sauce

Ingredients:

4 T olive oil
1 large onion
5 large garlic cloves
2 T dried basil
2 T dried oregano
1 t red pepper flakes
6 oz tomato paste
2 T sugar
2/3 C dry red wine
3 cans stewed tomatoes, crushed (28 oz each)
salt and pepper, freshly ground

Directions:

Sautee onion and garlic in olive oil, add basil, oregano and red pepper flakes.
Stir in tomato paste and sugar.
Add wine and reduce a little.
Add tomatoes and simmer for 1 1/2 – 2 hours.
Add salt and pepper.

Match made in Heaven:

Pasta and a glass of Red!
