2 T unsalted butter
2 T flour
1 C whole milk, heated
1/2 C Grana Padano, grated
5 cloves Roasted Garlic, coarsely mashed
1/4 t cayenne
salt and white pepper, freshly ground
On medium heat, melt the butter in a saucepan.
Add flour, salt, and peppers, continuously stirring for 2 min.
Add milk gradually, and let thicken, stirring, for a few minutes.
Remove from heat, add cheese and stir well.
For pizza, preheat oven to 450-500F.
Fry thickly sliced mushrooms and some rosemary leaves in butter until golden brown.
Spread 3 T of fine cornmeal onto the baking sheet.
Then roll out the Pizza Dough.
Top with White Pizza Sauce, mushrooms and grated Fontina cheese.
Bake for 18 min, or until the crust starts to brown.
Garnish with fresh parsley and coarsely grinded sea salt.
