6 oz bittersweet chocolate 65%
2/3 C butter
1/2 C sugar
1 C flour
1 pinch salt
Melt chocolate on low and add butter.
Stir to combine and let cool to room temperature.
Preheat oven to 400F.
Butter ramekins, then sprinkle with flour.
With electric mixer, whisk eggs for 5 min.
Add chocolate, then flour and salt, gradually, on low speed.
Pour into 4 ramekins.
Bake uncovered for 15 min or until the center no longer moves when shaken.
