Pineapple Upside Down Cake

Ingredients:

Topping:
1/4 C butter, unsalted
1/2 C light brown sugar
7 pineapple slices
7 maraschino cherries
Batter:
1/3 C butter, unsalted at room temperature
1 C white sugar
1 1/2 C cake flour
2 T pineapple juice from the slices
1 T baking powder
1/2 t salt
3/4 C whole milk
2 t vanilla
1 egg

Directions:

Preheat oven to 350F.
In a pot melt the butter with brown sugar.
Pour into the baking dish. Top with pineapple slices and cherries.
Mix all batter ingredients until well combined. Pour over the pineapple.
Bake for 40 min. Turn up side down. Serve slightly cooled.

Match made in Heaven:

Some good coffee if using regular flour, or a glass or Rose if using cake flour.
