1 C butter, at room temperature
1 C white sugar
1 C unpacked brown sugar
1 T vanilla
1/2 t salt
1 t baking soda
2 C flour
1 t cinnamon
3 C oats, quick cooking
Preheat oven to 375F.
With a mixer beat butter and both sugars.
Add vanilla and eggs.
Add salt, baking soda, and flour.
Mix in oats. Do not over mix.
Cover and refrigerate the dough for 1.5 hours.
Roll into small balls and flatten with a fork.
Bake for 10 min or until golden.
Wait 3 min to start transferring cookies off the baking sheet onto the wire rack.

If you are not a big fan of raisins, you can replace them with nuts, seeds, dried cranberries or even better, the chocolate chips!
