Cheese Stuffed Crepes

Ingredients:

2 C cottage cheese, drained, at room temperature
1 egg
1/3 C sugar
2 T sour cream
1 T vanilla
Crepes

Directions:

Add sugar, egg, vanilla and sour cream to drained cheese.
Mix, but don’t puree. Can substitute sugar with condensed milk.
Use 2 T per each of Crepes.
Roll them up and bake or fry.

Bake:
Preheat oven to 325F.
Butter the baking dish. Assemble rolls in a single row.
Cover with foil. Bake for 30 min.

Fry:
Melt unsalted butter in a pan.
Fry on medium heat for 3 min per side.

Match made in Heaven:

Top with fresh fruit and sour cream and confectionary sugar, or chocolate, or warm jam.
