Mango Pudding

4 t gelatin, unflavoured
1 1/2 C white grape juice
2 large mangos, peeled, seeded, cubed
1 C sugar
2/3 C whole milk
1 C sour cream
3 T white rum
1 T lime juice
heavy cream or sweetened condensed milk for garnish
mint leaves for garnish
berries for garnish


Dissolve gelatin in 1/2 C white grape juice.
Let stand while heating up 1 C white grape juice.
Combine the two and let cool, but don’t let it set.
Process mangos with sugar and 1/3 C milk until smooth.
Add the remaining ingredients but the garnish and process until well combined.
Add gelatin mix and process to combine.
Pour into small containers, cover, and refrigerate for 4 hours or overnight.
Before serving, top cream or condensed milk, and garnish with fruit and mint (optional).

Match made in Heaven:

Just add mint and fruit.
