1/2 C fresh ginger, peeled and very thinly sliced
1 C sugar
1 C water
1 t black peppercorns
Bring all the ingredients to a boil.
Simmer, stirring, just until the sugar is dissolved.
Cool and refrigerate overnight.
Keeps for 3 weeks refrigerated.

Use to make ginger soda: 3:1 ratio.
Use to make ginger beer: 4:1 ratio.
