Grapefruit Syrup

2 medium red grapefruits, ends trimmed, cut into chunks and seeded
2 C white sugar
2 C water
1 T lemon juice
1/4 t salt


Process the grapefruits in the food processor until almost smooth, but not pureed.
Combine all of the ingredients and bring to boil on medium-high.
Let boil for 3 minutes, take off the heat, and let sit for 1.5 hours.
Pour into a distilled container though a mesh and refrigerate for up to 2 weeks.
Use solids for other cooking or put them on top of vanilla ice cream.

Match made in Heaven:

Use in soda, cocktails, frozen in beer, or in baking.
Also, don’t throw away the solids, use them for making Panetone!
