Red Chili Pepper and Chocolate Chili

2 large onion, finely diced
4 cloves garlic, finely chopped
4 T olive oil
1 large red pepper, diced
1 t cumin
1 t chipotle chili pepper
1 t paprika
1 t chili powder
1 dried red pepper, crushed with seeds
1/2 t cayenne pepper
2 1/2 lb ground beef
1 can stewed tomatoes, crushed (28 oz)
1 can tomato sauce (14 oz)
1 can cannellini beans (19 oz)
1 can romano beans (19 oz)
1 lb mushrooms, sliced
2 T sugar
4 T cornmeal
1 C good quality chocolate ice cream
salt and pepper, freshly ground


Sautee onion in olive oil until soft, add garlic and fry until golden.
Add red pepper, cumin, chipotle pepper, paprika, chili powder, dried red pepper and cayenne. Fry for a few minutes stirring well.
Add ground beef and fry until no longer pink.
Add tomatoes, tomato sauce and beans, bring to boil.
Add mushrooms, sugar and cornmeal, stir and simmer on low heat for 20 min.
Stir every 10 min or so, making sure it does not stick to the bottom of the pot.
Add ice cream, mix well and simmer for another 20 min.
Add salt and pepper.

Match made in Heaven:

Top with shredded cheddar and scoop up with tortilla chips.
Get a big piece of freshly baked White Bread for dipping.
