Boiled Lobster

Ingredients:

Boiling: 2 T sea salt per 1 L water
Steaming: 1 T sea salt per 3 C water

Directions:

Boiling lobster:
Fill large pot with at least 2 L of water per pound of lobster.
Bring the water to a boil, add lobster head first, close lid, and start timing when water comes back to boil.
1 lb – 15 min
1 1/2 lb – 20 min
2-3 lb – 25 min

Steaming lobster:
Fill large pot with 2 inches of salted water.
Bring the water to a boil, add lobster head first, close lid, and start timing when water comes back to boil.
1 1/2 lb – 20 min.

Match made in Heaven:

Use a claw or two in a Caesar,
or its spicier version, Spicy Quail Caesar

Add some Lemon and Dill Butter, Lime and Chives Butter, steamed corn and a glass of Chenin Blanc
