4 L water
1/2 C salt
3 lb shrimp
Wash and dry shrimp.
Boil water, no salt. Add shrimp.
As soon as water returns to boil, drain the water, and soak shrimp in salted water and ice cubes, until cool.
Remove the back strap, peel and chill.
