Char Grilled Baby Octopus Skewers

300 g baby octopus, uncooked, beheaded, rinsed
500 ml vegetable stock or water
100 ml white wine
1 T lemon juice
80 ml olive oil
25 ml balsamic vinegar
2 T white wine
1 T lemon juice
1 garlic clove, crushed
3 lemon or lime wedges
8 Marinated Red Onion Pieces


Bring stock, wine and lemon juice to the boil.
Add the octopus and simmer gently until octopus is tender. (3 min)
Drain and cool.
Mix all marinade ingredients together.
Pour over cooked octopus and let stand for 4 hours or preferably overnight.
Alternate octopus with Marinated Red Onion Pieces and lemon or lime wedges onto a skewer.
Heat barbecue or char grill till very hot and quickly sear the octopus until crispy.
(6 min on the grill, turning a few times).
Makes 1 skewer.
