1/2 C butter
8 cloves garlic, finely chopped
1 C green onion, chopped
1 T lemon juice, freshly squeezed
1/2 C wine
2 large tomatoes, diced
2 Roasted Red Peppers, thinly sliced
1 C parsley, finely chopped
1 T oregano leaves, finely chopped
2 lb raw large shrimp, peeled, deveined, tail on
2/3 C kalamata olives, sliced lengthwise into 4
Sauté garlic in butter on medium heat until starting to turn golden. Add green onions and cook for 1 min.
Add lemon juice, wine, tomatoes and peppers.
Bring to a boil and cook for few minutes.
Add parsley and oregano. Stir.
Add shrimp and olives. Cook for 2-3 min or until shrimp is just done.
Serve right away.
