4 T butter
1 small onion, diced
4 large white mushrooms, chopped 1/2 inch pieces
4 T flour
1/4 C dry sherry
3/4 C chicken broth
3/4 C cream or whole milk
1/2 large red pepper
1/3 C parsley, chopped
pinch cayenne pepper
2 chicken breasts, cooked and diced 1/2 inch pieces
salt and pepper, freshly ground
Fry mushrooms and onion in butter, until onion is almost brown.
Turn heat to low, add flour, salt and pepper, and let thicken, stirring.
Add dry sherry, red pepper, stir.
Add broth and cream and bring to a medium thickness.
Add the rest of the ingredients and heat through, covered.
