1 fresh whole Cornish chicken
2 T oil
2 t butter
1 t smoked paprika
1 t cayenne pepper
salt and pepper, freshly ground
Preheat the oven to 350F.
Oil the roasting pan.
Wash the chicken inside out. Dry.
Carefully lift the skin from the breasts with fingers and place butter under, one 1 t on each side.
Mix salt, pepper, smoked paprika and cayenne.
Rub the chicken all over with the spices.
Put in the roasting pan.
Cover the pan. Bake for 30 min.
Set oven to 325F and continue baking covered for 1 1/2 – 2 hours.
For crispier skin, open the lid after 1 1/2 hours total time.
