Elk Meatloaf

4 lbs lean ground elk
4 C bread crumbs
1 C milk
4 eggs
1 large onion, finely chopped
salt and pepper, freshly ground
4 C mozza, grated
8 T tomato paste
4 C spinach

Mix first 7 ingredients. Shape into a rectangle.
Spread the tomato paste, then mozza and spinach.
Roll up and seal the edges.
Place in a roasting dish.
Bake @350 for 20 min covered, the uncovered, until ready.
Top with the blueberry sauce.
