8 large tortillas
3-4 C Mexican or Red Rice
3-4 C beans (pinto, black or refried)
3-4 C Carnitas Meat or grilled chicken meat, shredded
1 Tomato salsa
some chips (optional)
some sour cream (optional)
some cheese, shredded (optional)
some shredded lettuce (optional)
1 Guacamole (optional)
Fill each tortilla with rice, beans, meat, and salsa.
As an option, can quickly crisp the tortilla on the griddle after assembly, wrap in foil, pinch the ends and serve with chips.
