4-5 lb pork loin rib roast
salt and black pepper, freshly ground
Preheat the oven to 450F.
Brush the roasting pan with a little bit of olive oil, just where the roast would sit.
Clean the meat off the end bones. Make a small cut into the meat between ribs.
Sprinkle with salt and pepper. Wrap into a circle, tie with a twine.
Put into the pan, cover bone tips with tin foil.
Bake at 450F for 10 min.
Set the oven to broil for next 15 min.
Set the oven to 325F for next 30 min. In the mean time, make the stuffing.
Take out the roast, fill with the stuffing, cover with foil.
Continue to cook for 1.5 hours.
Remove from the oven and let rest for 20 min.
