BBQ Ribs

Ingredients:

4-5 lbs baby back pork ribs
1/4 C brown sugar
1/5 C white sugar
2 t smoked paprika
1 t black pepper, freshly ground
2 t roasted garlic powder
1/2 t chilli powder
1/8 t cayenne pepper
1/2 t ginger powder
1/2 t dry mustard
kosher salt, finely ground
olive oil, for the grill

Directions:

Rinse the ribs in cool water.
Remove membrane on the ribs and trim the fat.
Rub the ribs with salt and dry brine by letting stand for 1-2 hours.
(1/4 teaspoon of kosher salt per pound of meat)
Preheat the oven to 325F.
Mix all ingredients for the rub and rub the ribs. (2 T per side)
Wrap the ribs with thick foil and seal tight.
Bake for 2 hours or until tender and start to pull off the bone.
Oil and preheat the grill to medium.
Remove the foil, place the ribs bonny side up.
Brush with the BBQ sauce, 5 min.
Then turn and brush with BBQ sauce, 4 min.

Your favourite roasted-malty brown ale or a stout.
