Roasted Chicken with Vegetables

1 fresh whole chicken, 2-3 lbs
few strips bacon
4 carrots, cut lengthwise, then into chunks
1 large eggplant, cut into chunks, seeds removed
5 small potatoes, quartered
1/4 C olive oil
salt and pepper, freshly ground


Preheat the oven to 350F.
Wash the chicken inside out. Dry.
Season the chicken all over with salt and pepper.
Put in the roasting pan. Cover chicken with bacon strips.
Cover the pan. Bake for 1 hour.
Mix vegetables, salt, pepper and olive oil.
Add to pan around the chicken and continue to bake at 325F for 1 hour.
Uncover, and bake for 40 minutes, or until the chicken is browned and vegetables are cooked.
