1 whole duck
salt and pepper, freshly ground
Preheat the oven to 325F.
Wash the duck inside and out. Clean off excess fat and pat dry.
Rub inside and out with salt and pepper.
Stuff the duck with apples, place it into a roasting pan and arrange the remaining apples all around.
Add a little bit of water.
Cover and bake for 2 1/2 hours, basting the duck with its own drippings every once in a while.
Uncover and let the skin crisp up a bit for another 30 min or so.
Let rest for 15 before carving.
