Roasted Turkey with Vegetables

1 fresh whole turkey
6-8 strips maple bacon
4 carrots, peeled, cut lengthwise, then into chunks
1 purple or green cauliflower, cut into chunks
1/4 C olive oil
salt and pepper, freshly ground


Preheat the oven to 325F.
Remove giblets from turkey.
Rinse and dry the bird.
Season inside and out with salt and pepper.
Put in the roasting pan. Cover with bacon strips.
Cover the pan. Bake until 1.5 hours left before the turkey is ready.
Mix vegetables, salt, pepper and olive oil.
Add to pan around the turkey and continue to bake for 1 hour.
Uncover, take off the bacon, brush with maple syrup (optional), and bake for 30 minutes, or until the turkey is browned and vegetables are cooked.
