Rotisserie Chicken

Ingredients:

1 whole chicken, 2-3 lbs
1 Rotisserie Chicken Rub
2 T butter
twine

Directions:

Rinse and pat the chicken dry.
Rub the chicken inside and out with the Rotisserie Chicken Rub‎.
Place in a resealable bag and refrigerate overnight.
Prior cooking, let the chicken sit at room temperature for 1 hour.
Preheat the oven to 400F.
Slide the butter under the chicken breast’s skin. Twine.
Roast the chicken uncovered on its side for 30 min. Baste with the juices or water.
With tongs inserted into the cavity, rotate on its other side for another 30 min.
Baste with the juices or water.
Rotate to its back for 20 min.
Baste with the juices or water.
Then to its front for 20 min.
Let rest for 10 min on its breast before carving.

Serve with my Butter Mashed Potatoes
and Dipping Sauce.
