Tacos de Carnitas

2 lb pork shoulder
1 T olive oil
2 T orange zest
4 cloves garlic, finely grated
1 t red pepper flakes
1 t cumin
1 t cinnamon
2 t dry oregano
2 t kosher salt
black pepper, freshly ground
1 tomato salsa
1 guacamole
8 tortillas
sour cream, optional


Preheat the oven to 350F.
Rinse and pat dry the pork.
Mix the next 9 ingredients and rub all over the pork.
Oil the bottom of the baking pan, put the pork in and cover.
Bake at 350F for half an hour.
Bake at 325F for another 2 hours or until is done and starting to fall apart.
Cut in pieces, assemble on tortillas with salsa and enjoy with your favourite sides.
