Cheese Stuffed Manicotti

1 onion
2 cloves garlic
1 1/2 C ricotta
1 1/2 C mozzarella, coarsely grated
4 oz cream cheese
6 T Parmigiano-Reggiano, coarsely grated
1 package frozen spinach, thawed and drained (optional)
1 package manicotti, al dente
salt and pepper, freshly ground
4 C Tomato Sauce


Preheat oven to 325F.
Sautee onion and garlic.
Combine ricotta, mozzarella, cream cheese, salt and pepper.
Add onion and spinach (optional).
Staff manicotti.
Butter the baking dish.
Pour 2 cups of Tomato Sauce.
Gently put manicotti in it.
Top with 2 cups of sauce on top.
Sprinkle with parmesan cheese.
Cover and bake for 25 min.
Uncover, add Parmigiano-Reggiano and broil for 5 min.
Let stand for 10 min.
