Cheese Stuffed Crust Pizza with Mushrooms and Spinach

1 Pizza Dough
150 g mozzarella, freshly grated
8 sticks string cheese
8 large mushrooms, sliced in 4
1/2 lb fresh spinach
olive oil
sea salt
pepper, freshly ground


I make my pizza dough in a bread maker. Once ready, deflate and let sit for 5-10 min.
Brush the baking sheet with plenty of olive oil and roll/stretch the dough onto it.
Stretch the ends, lay the cheese strings along and roll the edges back in, sealing the seams.
Cover loosely and let sit and rise for 20 min.
Brown mushrooms on both sides on high, cool on paper towel.
In the same skillet, fry spinach, constantly stirring, until juices about to evaporate, 5 min. Cool.
Preheat oven to 450F.
Brush the pizza dough with the olive oil.
Sprinkle the sea salt, cheese and freshly ground black pepper.
Spread the mushrooms and spinach, and sprinkle with 1/3 of the cheese.

Bake 15-18 min @450F
Broil 3.5 min @500F

Let sit for 5-10 min before cutting.

Match made in Heaven:

Try champagne, it goes very good with the salty of the pizza.
