Spicy Potato Vareniki Pizza

Ingredients:

2 lbs Pizza Dough
4 medium yellow potato, sliced 5mm thin
1 C medium cheddar, shredded
1 C mozzarella or fontina, shredded
7 strips of bacon
4 sprigs of green onion
6 T fat and thick sour cream
1 t cayenne pepper
olive oil
salt

Directions:

I make my pizza dough in a bread maker. Once ready, deflate and let sit for 5-10 min.
Brush the baking sheet with olive oil and roll/stretch the dough onto it. Cover loosely and let sit and rise for 20 min.
Bake bacon at 350F until almost crisp. (10 min) Cut into bits.
Boil potatoes in salted water for 5 min. Drain, let cool.

To assemble, layer in this order:
– pizza dough
– 3 T sour cream
– potatoes
– cayenne pepper
– 3 T sour cream
– cheese
– bacon

Bake 15-18 min @450F
Broil 3.5 min @500F

Let sit for 5-10 min before cutting. Garnish with a few dollops of sour cream and green onion.
