IPA Pickled Vegetables

1 C apple cider vinegar
1/2 T sugar
1/8 C kosher salt
1 t black peppercorns
1/2 C ice
12 oz IPA
6 sprigs fresh dill
2 lb cucumbers, thickly sliced
1 large green tomato, quartered or cherry tomatoes


On high heat, stir the first 4 ingredients until salt has dissolved.
Remove from the stove.
Add ice, then beer.
Cool to room temperature.
Place dill, cucumbers and tomato in jars.
Pour the brine into jars and refrigerate for a few days.
