Red Rice

Ingredients:

1 C rice, long grain, uncooked
4 T olive oil
1 clove garlic
1 small onion
1 t cumin
1/2 t chili powder
1/8 t cayenne
2 C Chicken Broth
2 oz tomato paste
1 large tomato, diced with juices
salt and pepper, freshly ground

Directions:

Sauté the rice in olive oil until golden.
Add garlic and onion and fry until golden.
Add spices (cumin, chili powder and cayenne pepper). Stir for 2 min.
Add the rest of the ingredients, cover and simmer for 30 min. Or until done.
Fluff with fork.

Match made in Heaven:

Burritos and some refried beans.
