Oktoberfest Potato Salad with Cabbage and Bacon

6 medium potatoes, peeled and cut into eighths
1 large onion, sliced into half rings
1 small head of cabbage, shredded
5 slices bacon, cut into bite size pieces
1/2 bunch parsley, finely chopped, optional
olive oil
salt and pepper, freshly ground


Boil potatoes in salted water for 15 minutes. Drain.
Fry onions until soft.
Add bacon and fry until almost crisp.
Add cabbage and brown, stirring occasionally.
Add potatoes and parsley. Fry until golden.
Serve warm.
