Roasted Potatoes

3 large potatoes
3 T olive oil
salt and pepper, freshly ground


Peel, wash and slice potatoes lengthwise.
Season with salt and pepper and rub with oil in a mixing bowl.
Spread on a baking sheet and broil on high until browned.
Turn and broil longer until browned on the other side.

Can also use Smoky Mayo as a dip for potatoes.
