Beet Salad with Nuts and Prunes

Ingredients:

4 medium beets
1 C prunes, pitted, chopped
1/2 C roasted walnuts, chopped
2 cloves garlic, minced
4 T mayo
salt

Directions:

Boil beets for an hour. Peel the skin, and grate.
Add the rest of the ingredients, mix well.

Match made in Heaven:

A festive side to any dish.
