1/2 lb fresh spinach, washed and dried
3 T mayo
1 clove garlic, finely grated
5 large white mushrooms, sliced
3 T bacon bits or slices
4 T Parmigiano-Reggiano, roughly shredded
Toss the spinach with the mayo and garlic.
Add mushrooms and salt. Toss for 2 min.
Put the salad onto the plates, sprinkle with bacon and Parmigiano-Reggiano.
