Greek Salad

Ingredients:

2 large tomatoes, chopped
1/2 English cucumber, chopped
1/4 red onion, sliced
1/2 red bell pepper, chopped
1/4 C parsley, finely chopped
2 T mint leaves, finely chopped
1/4 C Kalamata olives, pitted and coarsely chopped
2/3 C feta, finely crumbled
Greek Vinaigrette

Directions:

Toss all of the vegetables and herbs with the Greek Vinaigrette.
Plate and sprinkle with feta.

Shish kabobs on the BBQ! Or seafood or chicken kabobs in White Wine Marinade.‎
