Herring Under a Fur Coat

Ingredients:

1/2 lb pickled herring in oil, bones removed, chopped
1 large onion, finely diced
3 large potatoes, boiled in skin, cooled, peeled, finely diced
4 carrots, boiled in skin, cooled, peeled, finely diced
3 large beets, boiled in skin, cooled, peeled, finely diced
1 1/2 C Hellmann’s mayo
black pepper

Directions:

In a cake pan, with removable base, layer all in this order:
– herring
– onion
– potato
– carrots
– beets
– mayo
– pepper

Cover, and refrigerate. When ready to serve, remove the pan sides.

Match made in Heaven:

Eats like a meal, or use it as a side for steak or chicken.
